Where do you get this from the text? Joshua 5 takes place at Passover and then Joshua 6 describes the destruction of Jericho. Unless there was a undocumented delay between the two events, the destruction was too early for a wheat harvest so the jars should have been empty or nearly so.
It should if you believe the Bible to be accurate as to time and place. Jericho appears to have been destroyed several times.
