Since writing was invented at least by 3,000 bc, why try to avoid the idea that Hebrews could read and write, and that God provided revelation and at times perhaps validation of some legends and invalidation of others?

No one is trying to avoid that. What they’re doing is assessing the available evidence. Such as this.
