Why isn’t there an evening and morning for the 7th day?
The seventh day doesn’t end, it represents God taking up his rule from his temple and it continues metaphorically to this day.
It could definitely make sense that it continues, because scriptures like Hebrews 4 state God is still resting.
I don’t think it’s eternal, and I do think it’ll end when God starts creating ex nihilo again.
What makes you think the New Creation is ex nihilo? The image in Revelation is that the old creation will be refined by fire, like gold, with the dross being melted away and what is pure and worthy remaining.
God has always created.
