Here’s a video, about 10 minutes long, called Science Works! Scientific Theory Explained, where 3 scientists in different scientific disciplines explain more fully the concept of a scientific theory.
There is also the classic essay “Evolution as Fact and Theory” by Stephen Jay Gould. A great short read that gets to the heart of the matter.
